The culinary pride of Monterrey. Young goat (kid) is slow-roasted over mesquite embers on metal stakes. The resulting meat is incredibly tender with a smoky finish. It is traditionally served with 'frijoles con veneno' (beans with pork fat), flour tortillas, and a spicy hand-ground salsa.
